[Nasu Hoshino Resorts] Limited-Time Spring Dinner Course: Sweetness Beyond Summer, Spring Tomatoes Dominate 8 Italian Dishes
Risonare Nasu in Nasu, Tochigi Prefecture, is Japan's first resort with an Agriturismo concept, uniquely blending natural scenery with agricultural production. From March 19 to June 20, 2026, its main restaurant, OTTO SETTE NASU, will offer a special spring-limited dinner course. Featuring tomatoes, generally considered a summer vegetable, this course uniquely utilizes ripe tomatoes at their peak sweetness in spring. It showcases 8 meticulously crafted spring dishes that fuse Tuscan Italian culinary techniques with local Nasu ingredients.
What is Agriturismo? A New Definition of Agriturismo in Nasu
Table of Contents
"Agriturismo" originates from Italian and combines agriculture with tourism, referring to a travel experience that allows visitors to personally connect with the land and local culture. Risonare Nasu is the first resort in Japan to center its concept around this idea. Surrounded by agricultural landscapes stretching into the distance and a thriving dairy industry, it bears a resemblance to the Tuscany region of Italy, making it an ideal stage for this form of tourism to take root in Japan.
The culinary philosophy of the main dining room, OTTO SETTE NASU, is based on the concept of "Regione × Regione" (Region × Region). It organically combines traditional Tuscan cooking methods with local Nasu ingredients, paired with a curated selection of natural wines, making each dish a profound dialogue between the land and the traveler.
Spring Set Meal Selection of 3 Courses
This spring limited-time set menu features 8 dishes. Here are three of the most representative exquisite dishes. Italian Tomato Cold Noodles "Tomato and Burrata Cold Capellini": Tochigi Prefecture's winter and spring tomatoes are harvested at their peak in early spring, with a sweetness comparable to fruit. They are made into a rich sauce paired with Capellini cold noodles as fine as hair, served with Italian original cream cheese Burrata and tomato jelly, creating an extremely rich layer of umami. Braised Beef Fillet "Beef Fillet Peposo": Peposo is a traditional Tuscan dish made by stewing beef with black pepper and red wine for a long time. OTTO SETTE NASU serves the beef fillet in a rosy color, accompanied by spring mountain vegetables charcoal-grilled. Strawberry Brie Tart "Strawberry and Brie Torta": A crispy tart base is layered with raspberry-marinated strawberries, Nasu Highland Brie cheese ice cream, and yogurt custard, finally garnished with edible flowers, as magnificent and elegant as a spring painting.
