Fuji and everything awakens, having a dinner in the forest that combines nature and fire performances is undoubtedly one of the most memorable experiences when traveling to Japan in the spring. Hoshinoya Fuji, Japan's first luxury camping resort located on the shores of Lake Kawaguchi, is launching a spring-only dinner menu called "Gastronomic Whole Foods" starting March 15, 2026, featuring the gifts of the earth nurtured by Mt. Fuji, and showcasing the unique taste of the mountains and forests in spring.

In the open-air restaurant overlooking the red pine forest, travelers can feel the breath of the mountains and forests while enjoying springtime ingredients such as baby moss, bamboo shoots, and aralia. With charcoal-fired dishes and outdoor-inspired cast-iron pots, the restaurant combines the wild charm of luxury camping with exquisite French cuisine.

The "Wild Feast" emphasizes local ingredients and traditional culinary culture at the foot of Mount Fuji, and through charcoal fire performances and outdoor-style plating, the cuisine is not only a taste experience but also a feast for the senses. The dining environment surrounded by the Akamatsu Forest brings a sense of nature to every dish.

Spring Menu Highlights

Appetizers: Rainbow trout and mountain trout tartare/mimosa style

Inspired by the springtime symbol of the mimosa flower, the colorful tarte tatin is paired with a toasted Dutch Baby muffin. The rich flavor of rainbow trout combines with the crispness of goldfish eggs and live mountain pickles, and the cherry blossom-salted cream cheese makes for an elegant start to dinner.

Main course: Charcoal-grilled beef and venison, bamboo shoots and cauliflower casting pot with rice

Beef and venison are roasted over charcoal to seal in the juices, and seasonal kochia is served to bring out the flavor of the forest. Side dishes include aralia and fiddlehead fries, roasted fava beans and mini carrots. The bamboo shoots and cauliflower cast iron rice presents a delicate blend of bitter and sweet spring flavors.

Dessert: Strawberry S'more Sundae

Inspired by the classic outdoor dessert S'more, it combines fresh strawberries, milk ice cream and strawberry sorbet. Layers of mugwort shortcake, almonds and roasted marshmallows, topped with berry compote, make for a perfect blend of sweet and sour and creamy flavor in your mouth.

Exclusive Drinking Experience with Yamanashi Wine

The in-house sommelier selected three wines, including Yamanashi wines, to enhance the dinner. Yamanashi is a well-known wine region in Japan, and the variety of styles of local wines is an elegant counterpoint to the spring menu.
